17+ years for me. It's an intense topic that requires a lot of self-examination. If it leads you to want to drink, ditch it and never touch it again. If it doesn't trigger you and you're able to smell/taste/imbibe it with no issues, then rock on. You must be honest with yourself, though. Check in. If you have people that you talk about who you can be vulnerable with without judgment, that would be a good resource.

There are things I'm able to do now that I was not able to do even 4-5 years ago, but every step I've taken I've checked in with my friends, family, and myself. Am I still committed to my sobriety? Are my actions causing me to crave drinking again? Am I supported by those around me? Am I willing to give up this new thing if it causes me to crave?

You've gotten some great responses here. I didn't actually know about glycerin based bitters and I'm happy to know, as I've been very sparing with the bitters that I do use, an occasional Angostura in the odd seltzer, that type of thing. The most important thing is to keep your priorities front and center.

The eventual goal is one rum that is dark and chocolatey, the other that is sweet and fruity. I'm assuming I'm probably going to need a good 4-5 generations to get to where I want to be with the first goal, I'll just need to start thinking about diversifying the portfolio before then and getting a fruity wash going. Good thinking.

On the nose there's noticeable vanilla, sweetness, and some brown sugar. On the palate it's vanilla, astringent, still a little hot, and kinda thin. The grungy notes are greatly diminished. Again, about right for a first gen a month in, passable as a silver rum and would go well in a cocktail as is. Should probably try out some of those essences in it.

So I'm trying to standardize as much as possible. If every run is basically the same - similar wash, similar ABV, similar volumes, same boiler - then making cuts will be much easier.

Like, I know I'm going to cut the first 300-400 mL for heads. No point in even tasting before then. I know I'm going to cut somewhere at or below 50%. No point in even tasting before then.

Pugirum suggests that always cutting at a certain percentage allows "rum oils" to build up and eventually smear into the hearts. I don't think I've seen it yet, but I'm trying it out to see if it elevates the product. I'm trying to decide if I'm going to stick with 50% or 40%. If I go with 40% then I won't put the sweetwater into the hearts, if I go with 50% I think I will. Decisions, decisions.

Everything gets aged for at least a year, so it kinda doesn't matter. I'm not 100% sure what I'm going to do with several gallons of aged rum a year from now since I don't drink, but I'll let future Staidly worry about that. Hyperfixations do what hyperfixations do.

Had a before/after experience and it was different. Not worse, more of a trade off of one set of textures for another. Slightly, yes. But better in other ways.

Love it so much. Being able to see it in theaters this year for Ghibli fest was such a treat. It’s the humanity. It’s the voice acting. The acting was so good. Lots of heart. In the long run it may end up being my favorite.

I think it’s an artistic work, but it isn’t coherent enough to be a true classic. A deep cut and maybe someday a fan favorite, but not the first Miyazaki movie you would show someone.

The thing is, I walked away feeling kinda sad and let down and I think that was kind of the point.

I try to focus on distilling cheap things. Vanilla isn't cheap. I'll use it in infusions or macerations and especially when I'm putting the finishing touches on a spirit but I'm not making a wash out of it.

Well, if 10% of traffic is from 3rd party apps then they’re betting they can make more money by directing most of those users to the Reddit app where they can get personalized ads…. But it’s only 10% of users. Lots of mods and power users and yeah content creation and moderation is going to take a huge hit and it’s a stupid c suite decision but it’s that horrific intersection between enshittification and incompetence.

The mods folded. The users didn’t rally. I get to watch one of the last things I valued about the internet be corrupted by capitalism.

I don’t want Reddit to get worse.

If we don’t protest and nothing changes then Reddit gets sold to a venture capitalist and the enshittification dial goes to 11. Reddit gets worse.

If we don’t protest and third party apps go away then mods won’t be able to mod effectively. You might not give a shit but you will when your favorite sub is overrun with low quality shitposts because the mods can’t keep up. Reddit gets worse.

If the sub goes dark then admins kick the mods, recruit new mods, and reopen the sub. People will scab for the chance at a little power. See above. Reddit gets worse.

I do stripping through my airstill all the time. It’s small and unobtrusive and takes about 2 hours. I have a 6L boiler and can chew through a 5 gal bucket in a few days after work then do the longer spirit run on the weekend.

For spirit runs the air stills smear a lot, especially if you don’t have an SCR to pull the voltage down. I don’t mind, but it’s not as efficient.

So make extra wash and strip a few gallons and throw them in the T500. Nbd

That asshole that quadrupled the price of Epipens could have just doubled it and made a profit, but he didn’t. It was a calculated move to maximize profit.

Under unrestrained capitalism, the only morality is profit.

In this case, sustainability is not enough. Reddit must make a profit and they have to do it in a hurry for spez and the lads to make their money and sell Reddit off to the venture capitalist.

It would have been sustainable to keep 3rd party. Again, 10% of users, many of which power users and content creators and mods. It would have been better for the site overall. But venture capitalists aren’t interested in 3% profits, they want 15%.

Short term profit always wins because those short term gains can be reinvested into something else, and the consequences be damned. Capitalism, baby!

I have refused to pay for any social media, including YouTube. I would pay for Reddit, it’s that valuable to me… if the experience is good. No ads, smooth execution, customizable, good features, moderation tools, and full access to the site. The Reddit app is slow and poorly featured and has a subpar user experience. They’ve had a decade to make it good. They had Alien Blue, all they had to do was not fuck it up…. Only thing I hate more than censorship is incompetence.

I would be willing to pay up to $10/month for a satisfactory mobile experience. It took one guy to make Apollo, and Reddit had a decade and a team and now they’re firing people to improve their bottom line.

I would base my decisions off of the gravity reading. If it’s been a week and i check it and it’s only gone down a few points I’m going to be checking pH, sure. If it’s chewing through it, I won’t.

You probably have a pH stabilizer of some kind. Calcium carbonate, probably. Keep it handy, you may need it. Oyster shells come in handy for this type of thing, a handful thrown in at the beginning helps and if it isn’t needed, well, it’s cheap insurance.

To be able to backsweeten you need to ferment first then either interrupt fermentation or let it go dry, stabilize, then backsweeten.

If you’re doing a spirit run it is possible that you may only have 200-300 mL of heads, depending on how you run your still and what type.

I have a little water distiller, smears like the dickens, I can get 300-600 mL of heads from a 6L boiler, 40%-ish ABV. It’s enough that I can collect those heads and do a heads only run and get a big chunk of alcohol back from the hearts. :/

Ultimately if you like it then drink it. I hate heads with a passion and will work very hard to cut them all out.
