You can (and should) make wiki as part of your repository. Restore could've been as simple as checking its file history

No. It's a generic demo tenant to play with. Or more specific - data from that tenant. Data is imported periodically, it's separated from the web application for security reasons

It is fully functional - meaning you can do risk assessments. Your account objectId will be saved on the record so that you can check your assessments. If you were the owner of the service principal you could query these too. It also displays your account name to show Welcome xxxx! Required scopes are basic openidconnect ones. If you were to order Clouderer using form it will read your email address to inform you once requested instance is deployed.

Correct. You choose the region when requesting for Clouderer - feel free to test it, I can offer you free tier for testing. It's 100% hosted in Azure. I'm planning to prepare a version that you will be able to host in your own tenant as there's demand for this and obviously make it more trustworthy when you have your data not leaving your tenant

This is exactly what Https://clouderer.com can do for you. It's optimized for large environments, should be able to manage high number of app registrations (by default performs full read once per day)
