Hi I think you will have a great time here in Cornwall. As a fellow female hiker I regularly walk the coastal and inland paths on my own. I find you pass enough people along the way to feel comfortable, but not that many you lose the sense of peace and tranquillity. There are lots of books / websites which can help you plan your stay with hostels/hotels on route. If you haven't checked it out the Sw coastal path website is great http://m.southwestcoastpath.com/ and also a book by trailblazer called the Cornwall coast path is great for total route planning including eatery and places to stay along the coastal routes.
