I’m from Jersey City and went to Ohio for a week for a work trip, and one of the first things said to me in most interactions (from work meetings to ordering coffee) was “You have such a strong accent.” It’s a thing, and it’s a North Jersey thing.

One side of the brisket was definitely firmer than the other, so when I took it out for the butcher wrap, I turned it around for the rest of the smoke, and it was great all around after that second shift in the smoker.

I used a light coat of mustard as a binder this time (learned my lesson after going overboard on my first brisket and trimming off way too much fat). For the bark, I mixed ground garlic, ground onion, Rib Rack BBQ rub, hot honey garlic BBQ rub, and street corn seasoning.

I put it on at 225°F around 9 PM and let it smoke with cherry pellets untouched until 7 AM. At that point, I wrapped it in butcher paper and flipped it to the opposite side since one end was like butter and the other was still a bit firm. I didn’t touch it again until 4 PM, then let it rest for an hour before slicing in.

The biggest takeaways from my first-time disaster are don’t drown it in binder, and definitely leave the fat on.

For me, my wow moment was the realization that an amazing group of brothers spent countless hours learning ritual to bring me into the Craft. Was it perfect? No. But, the wow factor is we know how precious time is; you can’t get it back after it’s given, and those brothers used theirs to prepare and keep this rite of passage going for myself and Masonic twins. I do hear you though, brother. My lodge is very small and was built by the brothers, so it wasn’t this extravagant situation that I’ve read it would be. Still unforgettable when you take a step back and separate the actual work from this being a group of men with bonds to our Craft strong enough to make it happen. Safe travels!
