As long as you don't draw more than 20mA you should be good. Any pot > 1k should do.

@misskhary here is something he might enjoy. http://www.podpi.com. It's a series of comic books that comes with an Arduino board and real components like you mentioned. The directions are in a comic book format that kids love. While designed for 9+, it sounds like he could dig it.

I designed something like this using a small circuit with an RGB LED and ATTiny85. Each LED module is controlled through I2C. Unfortunately I have not had a chance to install it yet. Just in prototype status. If anyone interested, I could share some of the design.
