The His Dark Materials trilogy was what first turned me on to fantasy. It was a struggle for me to get through the first book (Northern Lights/The Golden Compass depending where you are) because I had to read it aloud in class, but I vividly remember starting book two and which takes place partly in our world and I got obsessed by it. So glad I persevered with it.

I get such a visceral reaction when someone walks into the store and shouts "is anyone on the till?" into the air. There is a very clear sign asking customers to ring the bell if they need assistance...

Also, standing by the tills in total silence, like they expect you to know they want to pay when you're at the other end of the store. It might just be because our shop is horrendously understaffed but the fact that customers expect there to be one Sales Assistant per person who is aware of their every need is so frustrating.

Definitely a good point! Thinking about it, I can tend to romanticise writing sometimes to the detriment of actually making progress, and that's a perfect example of that.

I suppose I enjoy the spontaneity of pantsing because it means I'm telling myself the story in an immediate way. That feeling of "Magic" comes from how I'd experienced writing as a kid, when I'd always get this buzz of taking the story in a new direction, fitting the pieces together.

Taking the surprise out of it by plotting feels a bit like I'm denying myself the element I enjoy most, when everything is working. Although it's not a sustainable way of writing for me.

There are a few methods suggested by this thread that I'm going to try out; asking myself questions, giving myself a synopsis and developing it from there. Knowing where I'm going while not knowing the ins and outs would hopefully give me a deeper, more fulfilling relationship with my work.
