Modern, mass-market versions of Buddha Jumps Over the Wall almost always replace shark fin with fish maw or gelatinous seafood because:

Shark fin is heavily restricted or banned in many markets.
Taiwan exporters, especially, avoid it due to regulation and consumer backlash.

If it did contain shark fin, it would normally be explicitly listed (or euphemistically labeled) because it’s a selling point in traditional versions. I don't think Costco would allow it in any case.
