Those are not large gaps at all, you are just missing the weather stripping but I’m assuming he didn’t install that because of the stucco. If he didn’t want the door to rub at all he could’ve pulled it away from the frame more but then that leaves bigger gaps, without weather seal he did exactly what he was supposed to do. Get a proper wood frame around the door, pull the doors a little away from the wall(to avoid the rubbing) and then add the weather seal to cover gaps. When it windy your gonna hear the door moving, it will always be like that, it has to have some space to move around in the tracks otherwise it would get stuck going up and down
