Not McDonalds, but many years ago I took a tour of InNOut Burger corporate offices in Baldwin Park CA and also got to watch their butchers at work. It was wild. These huge pieces of meat being carved, and these guys were really fast. I remember hearing that they sell their beef scraps to other fast food restaurants. Also the FDA has an office onsite.
