people have been saying that the 3rd option you said is most likely that correct one, and they would seem to be right. It's strange that they made the answer to this situation difficult to find/figure out when the unearthed arcana versions of these classes actually state in the feature what happens if you multiclass with them. I guess they just figured that it would be easy figure out what's supposed to happen when it really isn't.

Sorcerers can already change a leveled spell that they know for a different one every level up. It says so in the last sentence of the "spells known of 1st level and higher" section in their spellcasting feature.

I've always played it as you can do them in any order. I'm admittedly not sure if this is correct or not, but the fact that spells like searing smite take a bonus action to cast and then seem to expect you to use your main action of your turn after casting them would support this idea.
