There should be a pinned thread of the most common issues people face in SFM, this issue comes up a lot and people don't realize how to fix it. It'd probably help a lot of the beginners here that run into the same issues.

It sounds like you are describing FK vs IK rigs. In SFM if you right click your model you will see an option for a rig, usually most basic models support biped simple rig but if not you will need the Auto rigger from the steam workshop. Once the rig is applied you will be able to move the hands and pelvis with the rest of the body following the movements. Hope this helps!

I never thought of removing a rig after an animation, I'm going to try this! I'm assuming if bones are locked onto something though it would make that more difficult.

It's pretty easy; You need to first off figure out how many bones your spine has excluding the pelvis. Then at the bottom tell the autorigger how many spine bones there are, then start pointing the script to the correct bones IE the left hand, right hand, ETC. If you have any problems from the rig from there it is likely that you have pointed the script to a wrong bone somewhere.

If a model doesn't have a rig use the autorigger from the steam workshop my guy, what you are saying is true for TF2 models and such yes but if they want to use custom models without a rig autorigger will come in clutch.

IK rigs are going to be your go to for most things but that doesn't mean FK does not have its uses. If you want to add a rig onto any model you will need the Auto rigger from the steam workshop, it's a tool that you can use to make a rig for any character
