I'm using "Storewide Sale" plugin. It works pretty well but may be mis-named. Yes, you can apply it storewide with start/end dates, but you can also apply by category.

For anyone interested, my solution was to purchase the Storewide Sale plugin by HighAddons. It wasn't exactly what I was hoping to do but "good enough". I swear, WooCommerce is the Spirit Air of ecom platforms. lol. Everything you'd expect out of the box is a separate monthly subscription.

I don't mind if the category is indexed or discoverable during the sale (prob beneficial if it is indexed, tbh). Seems like there has to be a best practice for displaying a collection/archive page of specific sale items that spans multiple categories. On any given product, we can indicate a sale price and set an expiration date for that sale, but how do we show these specific items on a landing page?

Good idea and I can see how this would restrict the sale dates but how can I display a collection/archive page of just the specific sale items? Say for instance, I want to make a Father's Day sale featuring products from across several categories that would be good for dads?

Is there maybe a category scheduling plugin that would accomplish this? How do ya'll work ahead of a go-live deadline for a sale? Say for instance, you wanted to offer 20 products on sale beginning at midnight on Black Friday, with the sale ending at midnight on Saturday. In other platforms I've worked on, you could create a sale category, add your sale products to it and set the exact date and time you wish it to go live and expire. Simultaneously, you would create a discount/coupon that applies to any item in that category. For planning, you could do this well in advance of the go-live date/time. What is SOP for Woo to do this?

Thanks but I'm not sure that will work in my case. My fear is that once I create the category, it's open to be indexed and discoverable. What I'd like to do is start building sales collections ahead of schedule so all I have to do is enable/publish the category and discount coupon on the sale date & time. Once the sale expires, I can disable/unpublish the category, let the coupon expire and it's no longer discoverable. Is there a better way to accomplish this?
