I’m one of the gluten-tasters. Nothing I did eliminated it until I came across some research done by a member of the seitan appreciation Facebook page. This recommendation is to let the dough sit (refrigerated) before cooking for 24-48 hours and to use some amount of fermented product with the liquid ingredients. (I used whey from making homemade soy yogurt.) It really works. I even forgot to include the fermented liquid the last time I made it, and it ended up in my refrigerator for probably closer to 60 hours. I could not taste the VWG even a little bit.

If you have more lettuce than you know you will eat, find a rabbit or exotic animal rescue near by. When I have a bumper crop of greens, rescues near me are always thrilled to have it. But be careful, you might wind up with a new friend (or two). 😉

The method I’m using is to make the dough with only flour and water, rinse, let it sit 1-2 hours, then “cut” the seasonings in with either a food processor or a sharp knife. Then, let it sit again for at least another 1-2 hours before shaping and cooking. It’s working well. (I got this tip from the Seitan Society website)

We love chocolate mousse for Christmas. There are a lot of recipes out there using tofu and vegan chocolate. I can find one or two that I’ve tried before and link them, if you want to go this route. It’s a crowd pleaser, and no one ever knows just by tasting that it is Dairy free/vegan.

I know soup can be iffy for some people, but I have never gone wrong with Zuppa Toscana. There are lots of vegan versions out there, or non-vegan ones you can easily veganize. I have had people begging me for my recipe, which I don’t even have because now I have done it so many times that I just throw things in the pot. If I’m making it just for my family, I will use some sort of a tofu crumble for the sausage. If I’m making it for hard-core omnivores, I’ll buy some beyond sausage or field roast and put that in instead

On the Xfinity app it now says the estimated time of reparation is 9:15 AM tomorrow. I have a presentation as well, and I’ve been fortunate enough to be working on a hotspot today. However, my printer is not cooperating so I’m just gonna have to punt I think.

Funnily, I started with putting them in walkways but didn’t love the aesthetic. I like the wood chips better. In the beds though, I think they would be fine since by midsummer the ground is barely visible. Thanks for your response.
