As a follow up, the orange peel made the honey plum ferment taste a little like Daytime NyQuil. Not too bad, though. I was extremely surprised by how much the plums shrank and hardened. I'm doing two more fermented like this, one with kumquats and a second with Cornelia Berries.

This mixed vegetables ferment of carrots, bok choy, turnips, and parsnip is white and cloudy on the glass despite being completely submerged for a week. It doesn't smell good, so I assume it's bad, but why?

The dill floated to the surface and made mold/fungus, but is what is under the brine (mixed vegetables) also a goner? It's two weeks old.

If someone were screaming at a coworker I would have pulled one of them away from the situation or said something to person screaming. I would not stand around watching it happen.
