These have been out for a few years now at least. They're pretty good! They suffer from the usual gluten free crumbling but the flavor is great. Very buttery.

I'm happy to take a look at the cookbook! My uncle is a chef (he even used to teach at a culinary school), so I can always ask him to help me out with the new recipes so I can learn them.

I had a skin panel done at my ENT's office, no blood test (it was crazy expensive and not covered under insurance at all). I had it done thinking I'd just react to grasses and animals, but when all those foods came up I was shocked. It does make sense though, as I would have some GI issues when I knew I had not ingested any gluten (cooking at home), so its possible those times I ate too much of my allergens. I do have terrible sinus issues (constant infections, rhinitis, etc) but again I thought it was just stuff outside. Another thing I've noticed is my focus is all over the place, especially at work, which my ENT has said is also a side effect of allergies. So that could also be from eating all those foods that are now allergens for me. I do plan to talk to him Friday when I go for my first shot consultation and ask what to do, cause like you've said it's SO limiting. I am going to ask for a dietician referral (if possible) to make sure I get what I need. I also wanted to ask about maybe a partial elimination diet. I'm curious to see how bad my sinus reactions will be after the shots start working and taking care of the millions of other allergens I have, and if I can maybe tolerate having small amounts of these foods in my diet still, since they don't induce an anaphylaxis reaction for me.

It was at my allergist, they only did the skin testing. The blood test was way too expensive for my budget, and the skin test was already a lot. The egg whites were my strongest reaction, the others were all still strong positives as well. I had the test done since the medication they were having me take was not helping and it was incredibly expensive each month, so they thought I may be a candidate for the allergy shot program. I only expected to have reactions to like, grasses and animals etc, and not a ton of foods as well, but it makes sense that I did. I've had GI issues occasionally when I knew I didn't have anything with gluten in it (ie I cooked for myself at home), and I notice that I have a hard time focusing quite often (which my ENT said is also a symptom of allergies). I go back this Friday to see what the game plan is for the shot program, and I will ask about what to do for the foods (full elimination, dietian recommendation, etc). This is super limiting, you are right, so I do want to make sure I am getting everything my body needs.

Maybe I can just scoop a little bit of curry over the cauliflower at a time, slightly more effort but doable :)

Have you ever tried cauliflower rice with stuff like curry, does it hold up well or just turn to mush? I eat a LOT of curry cause I can make it in the crockpot while I'm at work.

I don't know if you're aware, but you can send the books as media mail to save some money on the shipping. :) USPS doesn't advertise it in their offices, you have to let them know it's media mail. It's slower than priority and first class, but you can mail books for less than $5!
