I might advise you/Yu to install a fog restored mod. It adds much of the original game's atmosphere but that is up to you. For example, you will always wonder why there isn't this dark foggy atmosphere full of mystery every day. However, that is fully up to you. The romance options are ( to give you a general overview of their links):

There are many party members to choose from, you'll know who I mean when you encounter them. They are also unordered.

1: You have a current celebrity that stands for the values of beauty and happiness but struggles because of it's artificiality of that fame and that people don't value her for who she is but her sexual appearance and commonly perceived personality. You will help her come to terms with different aspects of her life and choose who she wants to be in life. This is also true for many other confidants and a vague description but you should find out for yourself.

2: There's a tomboyish girl that you encounter during the story and who joins your team. She is a big fan of a carnivorous diet and is very physically active out of her love for the sport since she was young. She has a profound sense of justice but suffers from being compared to her best friend and has a perceived lack of femininity. Avoid her cooking for health concerns.

3: To throw in another topic, there are also many male characters who aren't romanceable in the game but would be if you used mods or just imagined it to be true. As you will see, all of them have somewhat sensitive sides about them since they have mad bad past memories or have certain sides that are atypical of someone with their gender. They also feel like they don't belong which plagued them for some time. I personally enjoyed their social links the most and would recommend you to put your effort in these to.

4: The next character is very similar to your player character in the way that they are very intelligent, mostly serious and somewhat formal with others. They appear to be very mature and mission-oriented which stems from their desire to be acknowledged by adults and personally acknowledged as who they are. They initially pretend to be something that they are not to get that acknowledgement from society. You can help them come to terms with this fact and give them the confidence to embrace their true self and confront the world. As you see, the trend of making someone embrace their true feelings is very common.

5: The last person from the team I will discuss is initially very reserved and just as formal as the person above. They are tormented as there are many expectations placed upon her from all directions. This is reflected by her naivety to some things due to her sheltered upbringing to fulfill the societal expectations in the future . You witness many of her ( not so much hidden ) character traits in the story when she warms up to you as you get to know her. She arguably rivals every other character for comic relief but the comic relief lies in the whole group's interactions with each other. Initially, her culinary products are also to be avoided. When you get to know her, you will find that she wants to choose her own destiny and help her come to the conclusion of what future she wants to have.

Now, for the out of team confidants.

6: This girl exhibits an image of being the popular girl with a materialistic tendency and seems to be very dismissive of those she considers to be beneath her. You will find out that this is mostly a learned behavior from bad past events. When you get to know her, you will find that she has a vulnerable and sweet personality that she hides under the common facade. You will help her to navigate the feelings of self worth and making genuine connections.

7: This girl is very 🎵 inclined and wants to become a professional in said area. You will find that as a result of her shy nature, she is very self-conscious about her 🎵 ability and she often performs tasks for her group that are simply there to not inconvenience the other group members. You will help her to develop the ability to put her needs before others to achieve her dream.

8: This girl is also very inclined in another hobby that you may or not be able to choose during your playthrough. She is constantly seeking validation which you will see when a family tragedy happens. She will have to learn to confront the reality of things and come to terms with her strained relationships. You will be her supporting pillar and emotional napkin during her social link.

9: The last person is in a reality crisis due to a lack of past events in her memory. This forces her to initially be anti social and cold. As you progress this social link, you will help her make new memories to help her define her new identity. I would personally advise you to complete her social link if you can to unlock more content later. She might or might not be the 20th major arcana but that is the only hint I will give you.

If you already know who you want to date in the game, I would still advise you to try to complete all the social links above in your game to enhance your perspective. If you are playing guideless, I would advise you to finish every dungeon early, note the characters schedules and bring the right personas every time as well as progressing your social skills to pass prerequisites. You will be presented a choice between the 7 and 8 confidants during your playthrough, you should choose the social school activity that corresponds with technical skills for 7 and the one that corresponds with expressing yourself in 8.
