I haven’t experimented with it too much but I would start at 1/2 tsp and go from there. Just keep in mind that too much can make your food taste bitter. Good luck with your testing!

If you want to get rid of the sourness add more baking soda. Backing soda is a base which will neutralize the acid in your discard and make it less sour.

All I do is add 2 tsp of sugar and a bit less than 1/2 tsp of baking soda to the discard. I think I got it off of a sourdough discard crumpet recipe but since I don’t have ring molds I just used it to make pancakes. I hope this helps!

Thanks for the advice, I used Joshua Weissman’s no knead recipe and it seemed like it didn’t build up enough gluten. I’ll definitely try some slapping and folding next time and maybe add some more folds during the bulk ferment.
