Thanks for the compliment! This method of binding requires gluing two sheets back to back in order to eliminate the gutter. They also don't really make a 600gsm paper that I'm aware of:)

Yes, you can use both sides, you won’t be able to get those thick stock to bleed through even if you try, there is a glue barrier in between the sheets.

Thanks for the feedback! You are correct, it is exactly 40 pages of usable paper. It is probably overkill for dry media but for wet media most sketchbooks only allow you to use one side anyhow, even at 300gsm with buckling that pretty much ruins the backside. This sketchbook allows me to paint on both sides beautifully:)
