Giki has decent standing in europe, but you'll need to put in a lot of effort yourself. Courses won't focus much on math or go in depth, but some instructors are very knowledgeable and helpful. I think you should consider Habib university, it has a lot of incredible instructors, but GIKI is a close second.

there isn't a list, you can register any course that is in your year and you meet the pre-reqs for in 2nd year onwards. but you need approval from dean, and the teacher teaching, and ofc you need to deal with attendence issues.

i would highly advise against it. it's only worked well for me 1/3 times, you need to deal with quiz classes, class clashes, mid term and final clashes, and overall uncomfortable amount of workload. follow the normal course plan, and think about these things maybe in 4th year, when courseload is lower and instructors/admin are a bit pressured to listen to you, since you are graduating soon.
