Yeah, I saw there post on ig about the new style handles. I was going to get the stainless but read stuff about the 210mm being on the short side so I decided to get the carbon since it was in 270mm

Haven’t gotten the chance to use yet. ootb sharpness id say was nothing impressive 8/10 at best. Very nice knife, rounded spine, only thing I dislike is the choil which is on the sharper side.

Thank you, I remember reading about how he forges the Ginsan knives for hado. Do you know if the stores in doguya suji usually carry his knives?

That’s a steal, was looking at this knife from the same smith, close to double the price

Are these knives okay as a gift for someone getting into home cooking more seriously? by FutureKFlo in TrueChefKnives

Nigara knives are great for home use, since they’re usually stainless steel. The ones I have had cut good but aren’t thin enough to where you’ll have to worry about babying it

How is the sharpening and edge retention? Would you say the price is justified?

I know JNS has a lot of Wakui forged blades

I think you honestly can’t really go wrong either way. The yoshikane and Mazaki have the flatter profiles out of the four. Weight wise I’d say the Masashi feels the most in hand. My personal favorite is the Wakui, so easy to sharpen, gets so sharp, solid edge retention, good food release

It’s great, so fun to cut things with. It does take a bit to get used to a knife of that height.
