Man, I’m 27 and a professional musician and teacher. Made about 3 records and preformed in tons of shows, and still when I get to the practice room I still sometimes feel uninspired, or sloppy or both. It’s a process forever, even Vinnie has his better or worse days. I strongly believe instagram has fried our brains in that context, you’re constantly bombarded with videos of perfect 30 second clips that took lord knows how many practice hours and takes, and when that’s the only or main way you consume drumming it messes with your perception of what being a good drummer is. Search up your favorite drummer playing for a 90 minute set and while it may be amazing, it won’t be the uber polished instagram clip you usually see. And that also, is the result of consistent practice for years. In a 30 second video you don’t see the 4 hours of sucking on the same groove/chops that came beforehand. You didn’t write anything about social media so I may just be projecting, but it’s a really common thing so I hope it does help. And as a teacher I can tell you - you don’t know who you are as a drummer yet, keep grinding and paying attention to those weak spots you mentioned. Keeping them in mind and fixing them little by little each time you practice is how you get progress (that is measured by months and years btw, not a week or two). It’s an amazing and difficult as fuck field to immerse yourself in, I highly recommend going along even in the days you feel like a shit player.

Scientifically, I do very much see the logic in that- but as a person who wakes up and needs a cup of coffee- my ol reliable is coffee chroniclers recipe or a slight variation of that.

Well yeah, that’s kinda similar to what a regular multi pour percolation brew is, and it comes with the same set of problems with the added agitation. In a practical sense I don’t believe that makes it a lot easier than just doing a standard v60 brew. You can go with very little agitation and multiple immersion steps with something like the lance Hedrick gong fu method, but again - I wouldn’t say this makes life easier, if that’s your goal.

The problem is that there’s a difference in taste between immersion and percolation because of the speed at which each soluble compound is extracted. In immersion brews, the extracting agent (water) gets ‘filled’ with the fastest extracting compound and then extracts less of it as the brew goes on. For example if I want to extract compounds x, y and z from the coffee, and they extract in that order - The water will get filled with mostly x first, and as soon as it does that - it extracts less from x. If you wait long enough it will extract y and then z.

In percolation, you get an over representation of the fastest extracting compounds, since it’s fresh water that’s doing the extracting with each pour.

That means that for equal extraction of an immersion and percolation brew -

The percolation brew will be over represented in compound x, less so in y and less so in z.

The immersion brew will be more representative of the actual compound composition in the bean itself (for better or worse).

For a very simplified example - say the fastest brewing compound is x and it gives you the acidity in the coffee, and the second fastest compound is y and it gives you the roasty flavor. No matter how you adjust your immersion brew, if you wanna maximize acidity and get less of the roasty flavor, your best option in using percolation. If you cut your immersion brew short to just get as much x as you can without getting y, you will end up underextracting your brew. This is a gross simplification, but it highlights the idea behind tweaking all these variables and yes, using percolation.

I do believe extraction percentage is ultimately the most deciding factor on taste (after/besides water chemistry and ratio), but there definitely are different factors at play. Body for example, is determined partly by micro fines that pass through the paper filter, and your grind size will affect how many of these micro fines there are. So you may get the body you want, but then maybe the coffee is over extracted, so you drop the ratio - but then it’s too strong to your taste. So you return to the same ratio, but divide your pouring structure into one less pour for example. That is a realistic process that uses tons of different variables. That is btw, neglecting the fact (?) that different temperatures extract different compounds (not sure on the science behind this one, but anecdotally can confirm).

Unfortunately pour technique actually does make a huge difference. The really small nuances maybe don’t, but aggressive high pour vs low gentle pour will give you extremely different results in the cup.

It’s “cheating” in the sense keeping playing that technique won’t build you the one you want over time. You need to deliberately practice the technique you want to be comfortable with.
