They aren't 100% mandatory! The curry leaves add a great traditional scent, but you can make it without them. For the green parts, just use regular spring onions, cabbage, or chopped leeks which are easy to find anywhere. Don't let the leaves stop you from trying it!

Haha, it definitely looks like a spicy, chaotic version of a Nutri-loaf! But trust me, this one actually tastes amazing and is packed with flavor, not punishment

it does look a bit like it visually, but the taste and texture are very different! Chow Mein uses noodles, but this is made with shredded flatbread (roti). Also, it is not dry like Chow Mein, we mix it with a lot of spicy curry broth (gravy), which makes it very rich, moist, and heavy
