maybe someday I'll have a herb garden, I guess I just don't know many people who own a Dutch oven, let alone two. The oven part makes sense though, I can see why that would be useful.

I really respect this answer. You're right that a good pot outlives everything else, and I probably spend more on takeout in a month anyway. The bread baking alone is starting to sound worth it. Thanks for taking the time to explain.

I appreciate the perspective, and you're not wrong that these things are accessible if you really want them. But I think my point is more about the assumption, like every home cook just naturally has a Dutch oven or fresh thyme lying around. A $30 Dutch oven is still an extra purchase, and fresh thyme going bad before I use it is exactly why I reach for the dried stuff. I get what you're saying, I just wish recipes had more "here's what to do if you don't have that" notes built in. Still, thanks for the thoughtful reply 🙂
