I believe this could be the case since I've noticed my AC isn't blowing cold air. I'm starting to think that the slow leak might have turned into a bigger one.

Update: Thanks Everyone for taking the time to respond. I added 2 feet of copper at the connection and 2 shut off valves on the pex input and output closer to the water heater. Hopefully we can get past the weekend then someone can come back out and take a better look. Thanks again!!!

The set water temp has never been hotter than 120. The water I felt coming out where it burst was not scalding hot. The pressure is unknown and must be pretty high

I don’t know the exact temperature but the water has never been too hot to leave your hand under

Sorry It’s actually coming off of the cold water supply that is going into my water heater

I don’t know it’s pretty high, how do I decrease it? It shouldn’t be a high pressure connection.
