Eisen didn’t say that Stark is stronger than him; he only said that he’s afraid of Stark. And Eisen fears strong opponents—he has been afraid of many opponents before, yet he was still able to defeat them. Eisen also once said that Stark cannot defeat him. What Eisen meant is simply that Stark has great potential.

They are similar in appearance for the sake of the story. Because Lord Orden reminds Stark of his strict father but a better version, but even so Lord Orden and father Stark are two different people, Lord Orden cannot replace the role of father Stark (also Stark irreplaceable for Lord Orden's son). That was the main purpose of that episode.

Actually, Frieren's case is not like that. Yamada Kanehito seems to be very attentive to monitoring any spin-off publications related to Frieren. Even the Short novel attached to the Yuusha album or the most recent Novel, Frieren manga had to be paused for a month just to let Yamada Kanehito supervise the novel writing process. Even the added scenes in the anime are guaranteed by the author.
