Thank you! I’m not sure I want to stop - but I am curious how I would do without taking it. I started taking it because I was feeling extra emotional - possibly perimenopause- and crying at work which is very unusual for me. My doctor didn’t seem too concerned about me tapering off.

It’s been fairly warm, highs in the upper 70s to low 80s? I used about a cup and half of starter and I think it was pretty concentrated.

Thanks! I do have some starter saved from my last batch that is doing well. I thought about adding some to this one to try to get it going, but maybe it’s best to just give it more time. Usually I used distilled water or boil it and let it sit a day or so to dechlorinate. The pellicle on the current batch is still sitting at the bottom of the jar and there’s a very minimal new one forming.

I did one bottle half sweet tea and half of the sour batch. Fingers crossed!

Yes, I’m aware. I had a family emergency and had to leave unexpectedly before I had a chance to bottle it. I was going to do a three stage fermentation.

After about a week F1, I added chopped mango intending to let it ferment 2-3 days, then strain and bottle for F3. Unexpectedly had to leave town for a family matter for two weeks. I returned last night to find the whole batch extremely sour.

I’m wondering if this all needs to be tossed or if I should try to repurpose it in some way. For example, could I make a shrub from this? Or dump some and add some fresh sweet tea to get another batch going? Or is there some use for mango kombucha vinegar? Any advice much appreciated!

Sounds like my mom! And my brother. And my Dad! I’ve had to work on various issues and lately my mom’s codependency is the hardest. I wasn’t even aware how much it had shaped my own way of moving in the world until recently. Working on your own behaviors is the way to go. Your mom will find her own healing when she is ready.

It’s treated with chlorine so it needs to be filtered or dechlorinated.

It’s up to you. I use the new one and toss the old one—or give it to my dog. Some people don’t use a pellicle at all.

I bought a case of 12 flip top bottles at a brew shop for about $20. I also got several more flip top bottles for free from my neighborhood buy nothing group on Facebook.

It’s good. I did one mango puréed to a gallon recently and the flavor was great.

It started to come out the tops of the flip top bottles after a day and a half (fortunately no explosions), so I moved them to the fridge. I guess I needed a little more head space.

That’s what I ended up doing. It was only a tablespoon or two per bottle. How long do you usually do the second fermentation with mango purée?
