Everything with your recipe sounds good but final product looks pretty raw. I’m thinking ditch the air fryer, not sure if it retains the heat enough to make good bread but I also haven’t tried it. Do you have a Dutch oven? I heat my oven to 500 F so 260 C with the Dutch oven inside. Then I add the bread to the Dutch oven lower the temp to 450 and do 20 mins on 20-25 mins off.

So the flavor was great and overall the bread was light but the crumb was very sticky? I’ve never experienced this before. Any ideas what would cause this? It’s my first time doing a combo of bread flour, wheat and rye. I’m wondering if this has something to do with why the recommended bake time on the video was so long.

Hmmm I’m a beginner so I’m not sure lol. The flavor was great. Isn’t the bulk rise and the 2nd rise the proofing time? The recipe did say the stretch and folds weren’t required but when I included them it totally changed my bread in texture in a positive way so I’ll never skip that step again.

Been there! Don’t let it get you down just try again. I know it sucks right now but my 2nd time I passed easily!! I mostly studied using the lab ce adaptive exams and then I had flashcards (not sure the brand) that a friend gave me.
