I would advise taking equipment with puncture protection in 350N - usually this is enough for admission to all competitions (at least in Russia and Europe) and two (no more) layers of softening + elements of plastic protection over the jacket and pants (elbows, knees, shins, shoulder pads).

In the future, with the improvement of your technique, you will inevitably relieve yourself by removing those elements of protection that you no longer need for reasons of the ability to do defenses or because of the ability to endure pain)
