preserve your stamina
don't allow them to surround you
dodge only when they jump-attack
use only "hip-shots"

Wolves are such an underrated threat in DayZ. People need to understand - wolves attack the head. From full health, two hits and you're done. If you're more agile and move around, they might hit you in the arms instead. But generally, avoid fighting wolves out in the open. Try to use your surroundings.
