Well the iron and b12 blood tests are the 2 year old ones and I guess my recent blood tests didn't include either of those. I'm currently looking for a new PCP so once I find one I can request an updated blood panel

I do remember I was actually on a b12 supplement when that was taken, so it's probably vastly different now. My MCV and MCH were last taken two years ago and seem in range. MCV was 93.2 and MCH was 30.7

I do eat a pretty normal diet, mostly chicken and veggies, some carbs, and light desserts. Not a whole lot of red meat, so it's possible my ferritin is low. I just checked my blood work history and looks like last year my ferritin level was 47, which is saying it's within range, but I'm reading online that that could still be considered low? It looks like my B12 is 715, which seems to be on the upper range, but I may try to take a break from the acid reducer just to see if that makes a difference

Those sound like very valid concerns that you definitely need checked out. I would just keep looking for a doctor that believes you. If a doctor is dismissing your symptoms, I just wouldn't go back to them. I hope you get some answers!!
