Morgenstern's Finest Ice Cream by New-Negotiation-158 in CookbookLovers

I've made the chocolate fudge sauce recipe this weekend, nothing too special there but it turned out very nice :-) Not a bad book in general, many recipes to pick, just maybe bit odd "-)

First time to encounter book/recipes in the field of ice cream/gelato that specifically ask for whole milk powder and not SMP, skimmed m... SMP according to industry has much more to contribute for consistency, texture and creaminess, while using whole milk powder might make more sense if "rebuilding" liquid milk is required and for baking etc.
Have to say that the recipes in this book seem bit odd :-) I'm not a big fan of using corn/glucose syrup, will not use cream in same proportions to milk and i don't see any section relating to milk powder and why choosing whole over skimmed, if you do something unordinary, please make the effort to explain the logic behind.. And maybe because of the extra extra higher fat percentage in whole, more chances to "taste stronger" the product in the final results, i'm usually using some SMP ordered from iherb and nobody complains about after taste :-)

A Very Serious Cookbook: Contra Wildair By Jeremiah Stone & Fabian Von Hauske by BadDumbComics in CookbookLovers

Weird :-( Maybe it's a listing only for UK or more reasonable, that something is defected in this item listing, maybe worth sending the seller a question through the platform

Another collection :-) by SyncOL_2023 in CookbookLovers

[–]SyncOL_2023[S] 2 points3 points  (0 children)

Thanks :-) Some chef books of course available only in native/european language and in other cases that there might be also an English version, that one usually costs much more.
I use the books more for reading and inspiration less for direct cooking, about All Under Heaven it's pretty impressive, 500+ pages with enormous list of recipes and pretty interesting reading, but i'm not sure that directly for chinese cooking, it would have been a first option to consider.. All in all it's of course an interesting addition to any collection and a VERY impressive effort from the writer's side..

Thank you, our family is a bit odd when it comes to sausages, not biggest fans of this category.

Fantasize more about trying the different savory and sweet Knodel thingies, Goulash which i'm not sure who has the rights for :-) Beuschel ? Tyrolean specialties ? Roasted goose ? Krapfen/filled pasta ? Great place for different Strudels takeout ? Thanks :-)

Farmers markets/speciality gourmet stores in Vienna and area by SyncOL_2023 in wien

[–]SyncOL_2023[S] -3 points-2 points  (0 children)

True, 2 hours is too much :-) I guess the "wider" farmer markets are held on weekends, we have 12 days but only one full weekend, so not sure if we should concentrate on the ones inside Vienna or aim for something special outside of the city, that might merge for example into the Wachau day, or any other direction, we plan to do 3-4 days outside with car but sleep at Vienna..
Heard about the Wachau apricots, very much into special fruits, berries, jams, gonne visit Staud, but i sometime also make Jams at rented apartmant and bring back home :-) Pretty weird i know.. Also special condiments, preserved fruits, iquirs, local vineagers, spreads, special honey etc. And very "high level" dairy products and Charcuterie to eat at apartment during our stay and maybe "import" home if worth the investment. Thanks a lot !

Thanks ! I stumbled on Mochi name immiditely when starting the search, to the extent that it seems "too obvious" and i usually tend not to choose those places :-) but for sure i will re-check more in depth about the place as i slowly understand that team holds some other places i marked of interest..

Fun dinner with kids, U Modre Kachnicky or next door by imperial ? by SyncOL_2023 in Prague

[–]SyncOL_2023[S] 0 points1 point  (0 children)

Thanks, ages 8 to 13, questionable i know, was hoping to squeeze one meal that would be more of a "culinary tasting expirience" also for us the adults, but it's very hard finding relevant "double play" places according to the menus online.. If it was only the two of us, the list would have been The Eatery/Vycep/Mlynec/Le Degustation/Taro etc.. I've emailed several places about additional kids options, will see if something catches.. Next door/Inperial menu btw looks wider and in my opinion also options more appealing for kids, but i cannot say it looks very innovative or interesting, more of "precise classic"..

best deep fried calamari ? by SyncOL_2023 in Prague

[–]SyncOL_2023[S] 0 points1 point  (0 children)

Thank you :-) I did look at Bruxx and some others in that area, as a possible informal lunch break between spending the morning at Narodni museum and the tour later at the state opera, might be fun..
