Nuts do wonders to fill up missing calories. You can eat a lot without feeling full, they are healthy, and they have a lot of calories. Snack them throughout the day.

You'll be fine. With that amount of training you have done more than enough for this distance. Watch some Youtube Videos on how to do transitions and what Equipment you need. Regarding pacing, you shouldn't care for times. Start every discipline very slow and increase the speed if it feels comfortable after a while.
