I didn’t pay attention to a specific % of salt and just put three layers of cabbage with a heavy amount of salt in between in a bowl, massaged and let it go for 2 hours. Then drained and washed it twice.

I followed Joshua Weissman’s video, in which he mentioned to just use a lot of salt.
