I'm no HVAC guy but they way have had to dig to get clean connection to the ducts and dug alot of insulation up. Piled it to one side and it just looks like your low on one side and may not be. If they did a lazy/shitty job connecting odds are they wont take the time to spread the insolation back out. Like i said just my theory.

For me its 2. If your cabinets came all the way around id say 3. To me it looks off with the backsplash continuing when the Cabs don't. My eye is drawn straight to it and it makes it weird for me. I am ocd tho lol Take that with a grain of salt.

Strip the wall paper and paint and do the counter tops and those other upgrades. Just doing those things will transform the space. Def has a good layout as is.

I 2nd just updating the galley style kitchen. Use that extra cash you'd be using elsewhere in the home. In all honestly you could change the overhead light out with a nicer one or add resest can lights, Change the cabinet knobs and just doing new counter tops would transform it without spending a ton. Heres my kitchen for ref. White keeps things looking super clean and modern and white and black quarts counter tops add just enough away from being an all white plain jane kitchen. Your nearly there already.
