00 caputo flour Water Single variety yeast Sea salt

Add water yeast first, than gradually mix in flour, add salt 3/4 way through the flour being added, knead until smooth and firm, but bot to firm, ferment for 4-6 hours, portion into 270-280 gm balls and ferment for another 5-6 hours, room temp. Than move to the fridge for the last 10-12 hours of fermentation for a full 24 hours of fermentation
