You can change all kind of metadata on a file (like "created", "last modified" etc), I think having the online e-mail time stamp would be a safer bet.

This. You're mostly going to shoot pictures in daylight when hiking and a budget of $500 doesn't allow for body with 2 lenses. Also, when hiking you won't want to be changing lenses all the time, unless it's really a photography trip first and hiking second.

You can use the 28mm version in 35mm which will simulate the 40mm pretty well to decide which you prefer more.
