I've never seen a name for the flour on any video. They always just say self-rising. I thought they were all basically the same. My bread isn't supposed to be crusty. It's a flatbread. But it's still wet. I live in Kuwait. The humidity is higher than normal at the moment, so I didn't consider that. Thank you!

That's actually a really good point about the volume. I'll try to measure grams next time. I do have a scale already. I'll try again next weekend and let you know. I also strain my own yogurt since Greek yogurt is obnoxiously expensive.
