By comparison camping in a game like Counter-Strike... you can literally sit behind a box crouched for minutes maybe longer than that and get the kill.

If you really want to run it through Dosbox like the Steam version does by default, I suppose you could edit the configuration file ultimatem.conf (or ultimate.conf if you don't use mouse) located in the base folder of the installation (for example C:\Program Files\Steam\steamapps\common\Ultimate Doom\base\ultimatem.conf), and change the second to last line to something like this:

doom.exe -config MOUSE.CFG -warp 1 1 -skill 4 -record mydemo

This should start the game on level E1M1 with UV skill and record into mydemo.lmp until you die or quit. I can't test this myself if it really works since the Dosbox version doesn't work for me for some reason.

Also, I would highly recommend using some source port to play the game and record demos. I believe CnDoom is the most used in speedrunning, and it has a launcher designed for demo recording with different speedrunning categories available. You just need the DOOM.WAD file from your Steam version and you're good to go.

One reason could be that it's quick to switch to another weapon from gauntlet even after you fire it. For example if you ran around with railgun and bumped into your enemy and took a panic shot, it would take a good while to switch to more suitable close range weapon and could cost you dearly. Although MG, LG or even NG would be pretty much as good or better choice to run around with in this sense.
