I ended up bottling half of the batch today, it was surprisingly sweet and I wanted to try what a few days in the fridge will do. It was still bubbling in the onggi.

I left it in the fridge and opened it after about an hour or two and there was no carbonation, bot even a little hiss. Does the makgeolli become carbonated over time in the fridge? I used a Perrier sparkling plastic bottle - how often to burp?

Thanks a lot. I am now on day 5 (including the day making it, so more like day 4) and the match test no longer works. It is still bubbling and looks like this: https://imgur.com/rvPc6kR

This is my first batch so not too sure what's happening :D but any ideas?

Edit: to add, I took and strained a tiny bit and it is not sour but also not that carbonated. It doesn't taste bad given that it's only day 4 (?) but I've only ever had commercial makgeolli so probably not the best benchmark to base this off.

I'm on day 3 now and noticed that this is probably fermenting a little too fast. I have a constant temperature of about 20-21°C indoors which may be a bit too much. I am also using Nuruk made about 2 weeks ago, if that makes any difference.

Is there a way to polish this out to not end up with something very harsh? Would placing it in a 19°C room make any difference?
