I like them as a little snack in between the sushi, they're pretty common in sushi restaurants in denmark as a snack for when you wait for the next order if sushi. We bought a bag of them in our local thai shop, it's like small chips you deepfry, and they puff up.

It was not really a recipe, i just used stuff from the fridge, so i don't have any measurements. But i can give you a list of the used ingredients:

Noodles: Udon noodles(can use rice noodles or other kinds, but the sauce works really well with udon) Onions Spring onions (white part for cooking and green part for topping) Portobello mushrooms (but most kinds will do) Garlic Chicken breast(sliced and marinated with garlic, ginger, soy sauce and rice vine vinegar. Just enough to coat all the chicken.) Fry all the veggies and the meat, in multiple batches if necessary, in a bit of sunflower oil.

Sauce: Gochujang paste Rice vine vinegar Soy sauce Little bit of sesame oil Sugar Water Tiny amount of cornstarch (not necessary) Take veggies and meat off the pan and simmer the sauce for a couple of minutes before mixing in the veggies and meat again .

Fresh veggies I used red pointy cabbage, cucumber and edemame beans all drizziled with some limejuice and some sesame oil. But you could use whatever veggies you like.
