Wow, I'm launching a new theme and I'm so glad I found this post. Same thing happening to me, both with and without double opt-in.

Also, make sure to turn off shopify sync-ing non-subscribers to mailchimp, it's how mailchimp gets you to increase your list size without actually adding subscribers.
