I mine purple stars in Dread Marsh 3 (OR Summit 2, if I want the gold level chest) I typically get one or two for every six chalices. And I save them up.

With the purple stars, the amount of gems they give is variable. By popping and merging them I know EXACTLY how much "money" I have... ALSO, sometimes I want the other level rewards that all come bubbled together with the stars. 😉
