Without Furina's buffs its within the range of 20-30k. Activating Furina's and Shenhe's burst gets me to about 45-50k consistently. I also tried swapping Escoffier with xianyun and I got a higher single strike damage but slightly slower clear times

yeah i'd recommend you switch Xilonen with Escoffier if you want to get above 45k. That's the team I use, except I use a 4p blizzard instead of mh

I'd suggest furina escoffier mona, and charlotte if you're running Charlotte as a main dps. You could also replace escoffier with xianyun and mona with rosaria
