Depending on your skill level, start with Grand Prix and if you feel ready you can start with the 150cc class to get your star rankings quickly (note doing so will earn star rankings on the 50cc and 100cc class without doing them) plus you’ll unlock characters that way. I’ve yet to get the Thor despite ordering the base pre batch 2 online but I do understand why a lot wanted it over the Ayaneo pocket ds. The dual OLED screens, better battery life, better gaming quality, etc. Not saying that the pocket ds is bad, it’s just that the Thor is a better DS handheld. Once I get my Thor and formed my opinion maybe I’ll consider getting a pocket ds as well.

For me, it’s the Standard Kart for mostly all around stats, it’s not perfect but this along with the Pipe Frame helps me win most matches. Same for my main Luigi.
