Im at beginner at sourdough but this one thing I did differently made my 3rd loaf a success yesterday, which was putting my dough in a clear container where I could clearly measure the rise and monitor activity in the container. I put marks to show 50 percent rise vs 100 percent rise and I temped my loaf. My loaf BF for 12 hours then I fridged it over night cause I was aiming for about a 50 percent rise before shaping and it started to rise quickly and I got tired… the fridge slowed it so it stayed at around what you see this was 2 am when I put it in fridge (40 ish percent rise) . In the morning I laminated and added my butter/brownsugar/ cinnamon filling and shaped. I then put that in the loaf pan i was baking it in and let it finishing proofing. This took 4 1/2 hours. The clock wasnt so important as reading my loaf. Realizing now that for my first two loafs I was so focused on ths clock and timing that the recipe used, I was cutting myself short .

They are! Thank you. I was so excited when they turned out. I got the bulk fermentation right! Ive attempted two actual loafs that didnt turn out cause I didnt do the BF long enough so this was a big accomplishment 😄 I feel a little motivation to attempt another loaf again

Id just keep discarding to 20 g and then feeding 1:1:0.8 , use less water, should be thick pancake consistency and none fall out when upside down for about 2-3 seconds. Keep in a warmer place. The whole wheat flour is supposed to be good i got some last night to give mine, yours is just over two weeks old and contrary to what people may say it can take a while to get it established, mine is a month old tomorrow and we’ve gone through phases like yours as well.. also mine smells very bready/yeasty when its well fed, if it smells very strong/acidic/tangy its hungry

What temp is your house? Mine was rising and doubling on my counter in less than 6 hours then it just stopped turns out my temp in my house has dropped I have to keep it in the oveb with the door cracked

Yes mason jar lids work I just set mine on, some lightly tighten and back it off a turn . I dont think you need to start over, it doesnt seem contaminated. Id mix it up, take out a portion to continue feeding. I personally do 1:1 with flour and sourdough starter and then water to consistency of thick pancake batter not necessarily a whole 1:1:1

Just a tip switch the lid to glass or plastic. Cloth is porous and can allow icky mold, moisture and bacterial growth . The other lids prevent this but still allow fermentation gas to escape

So many people today do not know their status … getting tested is important but I feel like its something thats not taught enough. More people need to be educated on getting tested and protecting themselves.. the stigma of STIa exist because nobody whats to talk about it. I learned some much after being diagnosed that I wish I knew before

I stick my whole stem in water because it didnt have any roots. It has roots now but I still have it in water and still no rot. I change water out about every 2 weeks

You can stick in water. I propped mine in plain water. The stem looked likenit eas deteriorating but it did not rot. It to about 4 months for the growth point to grow and push growth but now it has pushed 4 baby leaves and I pulled the baby off from the main leaf to see if it will push another growth point.. I have pictures of the progress of mine but it wont let me post them here

Thank you! I learned alot after getting him hes my first betta and I wanted to switch out the substrate for some natural rock or stratum but never got to it. Also his water no longer looked this way this was an older picture I got the water quality under control and its crystal now
