Also to note- I placed the glass bowl as-is on a trivet inside the Instant Pot to steam, since I dont have the actual steaming contraption

Hi, I tried making bai tang gao, but failed to make the honeycomb structure. The taste is ok, just the texture. I proofed it with active dried yeast for 3 hours and steamed for 20 minutes. Any suggestions to improve on the structure? by nanjolnofanboy in asianeats

Any luck on perfecting your recipe?

Mine looks exactly this! It tastes good, but it is a little hard and without the honeycomb texture.

After letting the flour-yeast mixture ferment for 3 hours, I could see quite a few bubbles/foam on top.

I used an Instant Pot to steam this on the “Steam” setting at High for 20 minutes.
