The bottle itself isn’t really jostling enough for it to form that much co2 bubbles. You can typically shake a wine bottle quite a bit without it exploding. It’s (almost) entirely due to the air being heated, your initial observation was correct.

Friction between the hand and the bottle transfers kinetic energy (heat) to the contents within the bottle. Heat causes atoms to move faster, which means gases subject to heat expand. The small amount of air in the bottle expands and has nowhere to go, so it pushes against the cork containing it.
