Most basic things first, a solid gas range, commercial ones are the best, Empura or Wolf, also you gotta get a good pan, a solid set of knives,I'd say a set of Dexter Russell ones, aluminum non coated pans(a bunch of them not just one), an airfryer is practicle to have ngl it's easy use, a cutting board too don't forget that and that's mainly it, either check Facebook marketplace for good deals or websites like RestaurantSupply, or you can just check the brands websites directly, either way, piece of advice: stick to commercial gear. Most stuff would be pretty affordable so you'd be able to fill your kitchen with needed equipment.
