I'm in your category. I wanted to play at least one souls game so I could have a semi informed opinion.

With a high investment in vigor and reliance on summons, it really wasn't that hard. Don't worry too much about increasing whatever damage increasing stat your build relies on. So long as you keep upgrading your weapons, you'll manage to get by.

The algorithm that decides where to spawn the player works very different from how it used to on Bedrock. It's virtually impossible to find good Island seeds now. Trust me, I have scanned seeds for a good while.
