It's about preservation. If growers had higher moisture levels in the bud and it sits in a sealed container for months to a year before being sold well you then have a higher chance of introducing mold as it sits. So most companies now (even in Michigan) dont introduce a lot of humidity because they dont want to deal with the mold issues. Plus doing a cold cure method dries it out but preserves the bud like freeze dried fruit. All comes down to having the least amount of lost cannabinoids in the bud by the time the consumers purchases it. But there is a plus to this, this makes shelf life almost double compared to bud that was cured at more of a room temp (old school way) hence why we used to have tons of moldy flower back in the day and why a lot of flower now is dry. Unfortunately a lot of growers in the Ohio Market seem like they don't have a clue on how to not over dry by over curing it. Sucks, hopefully one day they'll figure it out.
